Mother and daughter team Claudette Campbell and Iman Marcano-Sowellhave been serving Trinidadian food at Calypso in the Chestnut Hill Farmers’ Market for years. Now they have started a food truck, The Mini Trini. The food truck is stationed at Love Park on Mondays and Thursdays and serves up roti, bak and saltfish, sweet potato fritters and more.
